For our next Cooking the Books, Sally Edwards turns to Moro, the much-loved restaurant and cookbook from Sam and Sam Clark.

Both Sams worked at The River Café before spending three months travelling through Spain and Morocco on their honeymoon. Those journeys went on to shape the food at Moro, which they opened in London in 1997, bringing together the flavours of Spain, North Africa and the eastern Mediterranean.

For this supper, Sally has chosen some of her favourite Moro recipes for a generous, spice-filled menu made for sharing around the table.

Expect warm spices, quality ingredients and plenty of flavour, all served in the relaxed, shared-table spirit of Cooking the Books.
